Elegant seafood soup

I don't actually remember making this soup, but there it was in my computer, with a note about how good it was. So I figured, I may as well include it in this site. Let me know if you like it!

Ingredients:

  • 1 tablespoon olive oil.
  • 1 medium size onion.
  • 3 garlic cloves, minced.
  • 1 cup Clamato juice.
  • 2 cups water.
  • 1/2 cup dry white wine.
  • 1/2 tsp tabasco sauce.
  • 1/4 cup orzo or quick cooking rice.
  • 1/2 pound frozen shrimps.
  • 2 green onion.

Instructions:

  • Heat oil in a large saucepan set over medium-high heat. 
  • Add onion and garlic and stir occasionally until onion starts to soften, about 2 minutes. 
  • Add Clamato juice, water, wine, tabasco sauce and orzo. 
  • Bring to a boil, then reduce heat to medium and boil gently, uncovered and stirring often, until orzo is almost cooked, about 8 minutes. 
  • Stir in shrimps, cover and continue to cook until shrimps turn pink.
  • Salt, pepper.
  • Stir in green onions and serve the day it is made but leftovers can be refridgerated for up to one day.
