Zucchini pecan muffins

Muffins. Oh, yummy muffins. Zucchini muffins are probably my favourite. Love 'em! As I write this, I've decided to bake some right after I'm done this page!

Ingredients:

  • 2 eggs.
  • ¼ cup of canola oil.
  • ¾ cup of sour cream.
  • ½ cup of grated zucchini.
  • ½ cup of flour.
  • ½ cup of yellow cornmeal.
  • 1/3 cup of sugar.
  • 2 tablespoons of baking powder.
  • ¼ cup of chopped pecans.

Instructions:

  • Combine eggs, canola, sour cream and grated zucchini. 
  • Combine flour, sugar, baking soda and pecans. 
  • Mix dry and wet ingredients. 
  • Grease muffin pan and cook for 25 to 30 minutes at 350F. 
  • Makes 9 muffins.
