Mom's banana bread

Oh boy. Is there anything better than Mom's banana bread. I'm sorry to say that my Mom's is better then your Mom's. Get over it!

Ingredients:

  • 1 1/2 cup flour.
  • 1 small teaspoon baking soda (not baking powder).
  • 1/2 cup milk.
  • Pinch salt.
  • 1/2 cup yellow Crisco shortning (get the vegetable kind in the yellow box).
  • 1 1/2 cups sugar.
  • 3 eggs.
  • 3 very ripe bananas.
  • Pecans (or walnuts or chocolate chips or both).

Instructions:

  • Mix flour, baking soda and salt.
  • In a separate bowl, mix Crisco and sugar. Beat.
  • Add 1 egg. Beat.
  • Add 1 egg. Beat.
  • Add 1 egg. Beat.
  • Add first bowl and milk to second bowl, small bits at a time, alternating.
  • Bake at 350 for 45 minutes to one hour.
  • Makes 2 rectangle cake pans.

Sadly, this image of banana bread I found on-line, pales in comparison to my mother's glorious banana bread, but there you have it, just for inspiration.
