Mom's pineapple chicken

The joke in my house, is that I have made these countless times, when in fact, I have made them only once (if that). But I recall my mother's amazing pineapple chicken, which usually went along with other Chinese classics.


  • 2 eggs.
  • 1/2 cold water.
  • 1 cup flour.
  • 1/4 teaspoon baking powder.
  • 1/2 teaspoon salt.
  • 2 chicken breasts.
  • Oil for frying.
  • VH pineapple sauce (orange) or cherry sauce and add canned pineapple (quarters, with not too much sauce).


  • Mix all ingredients except chicken and sauce with mixer.
  • Cut chicken in cubes.
  • Dip chicken in mixture.
  • Fry in oil.
  • Pat with paper towel.
  • Put in Pyrex dish and in oven at 300 degrees to keep the warm until all pieces are done frying.
  • Mix sauce with pieces JUST before serving.
