Mom's fruit ketchup (For Aimee) (version française, cliquer ici)

This is a classic in the Roy family. Aimee, our cousin's daughter wanted to have the recipe, so there you have it! Enjoy down there in beautiful Goergia!

Ingredients:

  • All fruit, onion and celery below are peeled and cut in medium sized chunks.
  • 20 tomatoes (red).
  • 6 apples (red).
  • 6 pears (bartlett).
  • 6 peaches (preferably from Georgia, the only good kind).
  • 6 onions (yellow).
  • 1 celery (the whole thing).
  • 6 cups sugar.
  • 2 cups white vinegar.
  • 1 teaspoon salt.
  • 1/2 teaspoon ground pepper.
  • 1 tablespoon marinating spices, wrapped in cheese cloth.

Instructions:

  • Place all ingredients in a large pot.
  • Bring to a boil on high, and then simmer on low for at least 2 hours.
  • Let cool.
  • Place in preserving jars.
