Sabrina's curried butternut squash and apple soup

This is a delicious soup. It just crazy loaded with wholesome goodness and taste almost like candy! Enjoy!


  • 1 large onion.
  • 3 cloves garlic.
  • 5 tart apples (i.e. Granny Smith), peeled and diced.
  • Few tablespoons butter.
  • 1 medium butternut squash, peeled and diced.
  • 2 litres vegetable or chicken stock.
  • 1 or 2 tablespoons of curry powder, to taste.
  • 1/2 cup heavy cream.
  • parsley or chives and sour cream, optional.


  • Saute onions, garlic and apples in butter, seasoning with salt and pepper. Saute approximately 5 minutes.
  • Add stock, squash and curry powder, simmer for about an hour.
  • Puree and stir in heavy cream. 
  • Garnish with parsley or chives and sour cream if desired.
