Fruitcake

I got this recipe from my Dad, but the recipe header said something about aunt Gisèle. Which may have meant that it came from my cousin. Not sure. I know fruitcake is mocked a lot, but I happen to like it a lot. Enjoy!

Ingredients:

  • 2 cups white sugar. 
  • 1 ½ cups melted butter. 
  • 2 cups molasses. 
  • 1 cup milk. 
  • 5 eggs. 
  • 1 teaspoon baking soda. 
  • 1 teaspoon cinnamon. 
  • 1 teaspoon cloves. 
  • 1 teaspoon allspice. 
  • 1 teaspoon nutmeg. 
  • 4 cups flour. 
  • 1 lb Corith raisins. 
  • 1 lb raisins. 
  • ½ lb mixed peel. 
  • ½ lb walnuts. 
  • ½ lb multi colour cherries.

Instructions:

  • Mix sugar, butter, molasses, eggs and milk. 
  • In a separate bowl, mix flour, spices, raisins and fruit. 
  • Make sure to coat the fruit with the flour.  
  • Grease 4 small cake pans. 
  • Mix the liquid (first step above) with the solids (second step above) and mix well. 
  • Bake at 250F for at least 4 hours. 
  • When the cakes are done, remove from pans and brush with Cognac or Rum. 
  • Store in sealed containers.
