Marc's Caesar salad dressing
This Caesar salad dressing has become quite popular with the Montréal residents. Oddly, the recipe remains a bit elusive, almost as if there are untold secrets. This is the closest we have come to the truth:
Ingredients:
- 1 egg, separated.
- Vegetable oil.
- 1 large clove of garlic, crushed.
- Dijon mustard.
- White wine vinegar.
- Worcestershire sauce.
- 1/2 teaspoon sugar.
Instructions:
- Separate the yolk and place in a bowl, discarding the egg white.
- Using a whisk, whip the egg yolk.
- Add vegetable oil and keep whipping, until the mixture is a bit thicker but still liquidy (thickness of salad dressing).
- Add crushed garlic.
- Whip.
- Add Dijon mustard to taste.
- Whip.
- Add Worcestershire sauce, to taste.
- Whip.
- Add a small amount of white wine vinegar and sugar.
- Whip.
- If the end result is to thick, add a bit of oil until it reaches the desired consistency.
