Cauliflower and cran Orecchiettes (version française, cliquer ici)

Dad asked me for the recipe I did at the condo in Tremblant last week, so I decided to place it on chefalain so everyone can have it! 

Ingrédients:

  • 1/2 onion, slices (sliced, not chopped)
  • 1lbs spicy pancetta
  • 1/2 cauliflower, broken up in little florets
  • 1 clove garlic, chopped
  • 1/3 cup 15% cream
  • 1/2 cup parmesan, grated or shaved
  • Salt and pepper to taste
  • Orecchiettes (little ear-shaped pasta, but you can also use small shells).

Instructions:

  • Cook pasta 3 minutes less than the time indicated on packaging. Drain, keeping aside 1/3 cup of the water.
  • Meanwhile caramelize oinion and cauliflower (in butter).
  • Add garlic and pancetta at the end and cook a little while more.
  • Add pasta and reserved water, until water has evaporated.
  • Add cream and parmesan. Simmer on low until you obtain a creamy sauce.
  •  Season to taste.
